Thyme and olive oil sorbet
Ingredients

- 1 litre of water
- 350g of sugar
- 6 sprigs of lemon thyme
- 1 lemon, juiced
- Nyons Olive Oil PDO
Tip
An original take on sorbet! You can serve it with a shortbread made with black olives from Nyons PDO.
Instructions
- Bring the water, sugar and lemon juice to the boil;
- Remove from the heat and leave the lemon thyme sprigs to infuse for 30 minutes;
- Strain the syrup through a fine-mesh sieve and churn in an ice-cream maker;
- Serve a scoop in a glass, drizzle with a spoonful of Nyons olive oil and garnish with a sprig of lemon thyme.
Tip
