  • A Guyot-trained pear tree
  • 1 teaspoon of honey
  • 1 teaspoon of mild-flavoured olive oil
  • Vanilla (powder or flavouring)
  • 4 spices
  • Fresh verbena or as a herbal tea
  • Butter

Instructions

  • First of all, steep the verbena in hot water, then leave it to cool.

  • Strain the herbal tea, then add the vanilla, the four-spice mix (½ teaspoon), the honey and the mild-flavoured olive oil.

  • Peel the pear, cut it in half and slice it lengthways into thin slices.

  • Marinate the pear in the mixture of verbena, spices, honey and olive oil.
  • Separate the pear from the marinade, keeping the marinade to one side.
  • Heat a knob of butter in a frying pan and fry the pear slices on both sides. Arrange them in a deep plate.

  • In a frying pan, simmer the marinade over a low heat until it thickens. Pour it over the pears. It’s ready!
