Olive oil from Haute-Provence has been recognised under the PDO designation since 2001 in a region centred mainly around the Durance Valley. It is in this region, which benefits from a combination of terrain and microclimates, that the Aglandau variety has adapted and become the dominant variety in olive cultivation here. Located in the Provence-Alpes-Côte d’Azur region, the geographical area covered by the PDO Haute-Provence olive oil designation comprises 94 municipalities, including 83 in the Alpes-de-Haute-Provence, 2 in the Bouches-du-Rhône, 4 in the Var and 6 in the Vaucluse. The olive-growing terroir of Haute-Provence is characterised by a landscape strongly shaped by the terrain, where olive trees are mainly found on slopes, hillsides and foothills, and rarely on the plains. The landscapes are characterised by the presence of terraced fields, the result of a long history of land development, which allow for the cultivation of sometimes steep slopes whilst limiting erosion and promoting soil retention. The Aglandau variety has become the norm in this area as it is relatively resistant to frosts occurring during the harvest, the region being situated on the border between the Mediterranean and Alpine climatic zones.
