Homemade fig, honey and olive oil ice cream

A fig, honey and olive oil ice cream? ‘How unusual!’ you might say! Olive oil works perfectly well in desserts, especially ice cream! This Nyons olive oil from PDO, with its subtle flavours, pairs perfectly with wildflower honey and dried figs.

Ingredients

A PDO
For 4 personnes
  • 225 g cold full-fat single cream
  • 125 g condensed milk (unsweetened)
  • 35 g whipped cream powder
  • 1 c. à soupe glucose sugar ((makes it moister))
  • 3 c. à soupe wildflower honey
  • 80 g dried figs
  • 3 c. à soupe Nyons olive oil PDO

Astuce

For this fig, honey and olive oil ice cream recipe, choose a Nyons olive oil PDO (subtle flavour) for its dried fruit aromas and buttery taste, possibly accompanied by notes of fresh hazelnuts and/or freshly cut grass. You could also choose: PDO olive oil from Nice, PDO olive oil from Languedoc, and French olive oils made from the Cailletier, Grossane and Tanche varieties...

Instructions

  • Mix the well-chilled single cream with the whipped cream powder.

  • Add the unsweetened condensed milk, followed by the honey.

  • Chop the dried figs into small pieces and stir them into the mixture.

  • Finish by adding the Nyons olive oil (PDO). Mix well.

  • Place in the freezer for at least 4 hours, stirring every hour (or use an ice-cream maker).
