Invisible apple and pear cake

Have you heard of the ‘invisible cake’? It’s a cake with so much fruit, cut into thin slices, that you can barely see the sponge! Our recipe uses Golden Delicious apples and Conference pears, along with Nyons olive oil (PDO), which is ideal for making desserts.

- 500 g Golden Delicious apples
- 500 g Conference pears
- 2 eggs
- 80 g of flour
- ½ sachet of baking powder
- 50 g sugar
- 1 sachet of vanilla sugar
- 10 cl milk
- 15 g Nyons olive oil PDO + for the mould
- ½ lemon
- 1 a pinch of salt
Tip
Choose PDO olive oil from Nyons (subtle flavour) for its dried-fruit aromas and buttery taste, possibly accompanied by notes of fresh hazelnuts and/or freshly cut grass.Also choose: PDO olive oil from Nice, AOC Languedoc olive oil and French olive oils made from the Cailletier, Grossane and Tanche varieties...
Instructions
- Preheat the oven to 180°C.
- Peel and deseed the fruit, then slice it into very thin strips using a mandoline.
- Squeeze the half lemon and drizzle the juice over the fruit.
- Whisk the eggs with the sugars until the mixture turns pale.
Pour in the Nyons olive oil (PDO), followed by the milk. Add the flour, yeast and salt. Stir in the fruit (there will be far more fruit than dough – that’s the idea!).
- Grease a loaf tin and pour the mixture into it. Smooth the top.
- Bake for 40 to 50 minutes and enjoy whilst still warm.
