  • 3 eggs
  • 500 g of fromage blanc
  • 100 g sugar
  • 90 g of flour
  • 1 c. à soupe Nyons olive oil PDO
  • 1 tonka bean
Fruit purée:
  • 300 g seasonal fruit (in this case, peaches)
  • 1 c. à soupe Nyons olive oil PDO
  • 1 c. à soupe sugar (optional)

Tip

Subtle-flavoured olive oil is generally mild, with aromas of fruit (dried, ripe, red) or flowers, accompanied by vegetal notes. Subtle-flavoured olive oils (PDO Nyons, PDO Nice, PDO Languedoc and oils of the Lucques, Cailletier, Tanche, Grossane, etc.) will pair very well with this recipe. We recommend a Nyons olive oil (PDO) for its aromas of hazelnuts, fresh grass and green apple, and its buttery notes.

Instructions

  • Preheat the oven to 180°C.
  • Mix the fromage blanc and sugar together in a mixing bowl. Separate the egg whites from the yolks. Stir the egg yolks into the fromage blanc and sugar mixture.
  • Add the flour and mix.
  • Add the Nyons olive oil (PDO), followed by the grated tonka bean.

  • Whisk the egg whites until very stiff, then gently fold them into the mixture.
  • Pour the mixture into a springform tin approximately 20 cm in diameter, which has been greased with oil or sprayed with cooking spray.

  • Bake the cake in the oven at 180°C for 30 minutes.

  • After 30 minutes, switch off the oven and open the oven door to allow it to cool down gradually.

  • After 1 hour, remove from the oven and leave to cool for several hours in a cool place before turning out.
Prepare the fruit purée:
  • Wash and prepare the fruit (remove the stones or seeds, depending on the type of fruit). Cut them into rough chunks. Cook them over a low heat for 20 minutes in a saucepan with the Nyons olive oil PDO and the sugar (depending on the sweetness of the fruit you have chosen). Blend the mixture and pour it over the cake once it has cooled down.
