  • To make this recipe for orange and olive oil cupcakes, you will need:
For the dough:
  • 100g of mild-flavoured olive oil
  • 1 orange
  • 100g caster sugar
  • 2 eggs
  • 50g ground almonds
  • 150g of flour
  • 2 tablespoons of cornflour
  • 2.5 teaspoons of yeast
For the topping:
  • 300g cream cheese (such as Philadelphia or Saint-Môret)
  • 4 tablespoons (60ml) of mild-flavoured olive oil
  • 100g icing sugar
  • 1 vanilla pod
  • 1 mandarin zest

Tip

For a tangier version of these orange cupcakes, replace the orange with lemon. These cupcakes can be made in a whole range of different flavours… Why not give the chocolate and pistachio, chocolate and raspberry, and chocolate and passion fruit versions a go!

Instructions

  • Whisk together the olive oil, caster sugar, eggs and grated orange zest until the mixture is light and fluffy. Add the ground almonds.
  • Mix and sieve the flour, baking powder and cornflour. Then fold half of this mixture into the previous mixture. Squeeze the orange and measure out 75ml of juice; add it and mix well, then fold in the rest of the flour.
  • Pour the batter into cupcake cases and bake for 20 minutes at 180° (check with the tip of a knife – it should come out clean).
  • Remove from the oven and leave to cool.
  • Whisk the cream cheese with the olive oil and icing sugar, then add the mandarin zest and the seeds from the vanilla pod. Transfer to a piping bag and decorate the cupcakes.
