Ingredients

A PDO
For 6 personnes
  • 90g of mild-flavoured olive oil
  • 6 eggs
  • 150g of sugar
  • 1 sachet of vanilla sugar
  • 100g of flour
  • 120g dark chocolate
  • 1 teaspoon of vanilla extract
  • 1/2 teaspoon of vanilla powder
Royal icing with olive oil:
  • 1 teaspoon of mild-flavoured olive oil
  • A few drops of lemon juice
  • 100 to 150g icing sugar

Tip

To make these Christmas baubles, choose a fairly mild oil with aromas of dried, ripe, red and exotic fruits. Instructions

  • Recipe
  • Preheat the oven to 180°C.
  • Separate the egg yolks from the whites.
  • In a mixing bowl, whisk the egg yolks and sugar until the mixture becomes frothy. Add the flour, stirring regularly, then the mild-flavoured olive oil.

  • Divide the dough into two.
  • To one half, add the vanilla extract and vanilla powder.

  • Melt the chocolate in a bain-marie and add the melted chocolate to the second half of the dough.
  • Whisk the egg whites until stiff. Gently fold them into each half of the batter.

  • Grease and flour some Christmas bauble-shaped moulds.
  • Vary your creations: 100% chocolate, 100% vanilla, or make two-flavour treats by alternating the mixtures in the moulds.
  • Bake immediately for 15 to 20 minutes (depending on the oven). Then leave to cool completely.
  • If you wish, make some olive oil royal icing to decorate your balls. Mix the olive oil with the icing sugar, whisking vigorously, and add a few drops of lemon juice. The icing should be neither too runny nor too thick; adjust the amount of sugar or olive oil as required. Then decorate your balls however you like.
