  • 1 courgette
  • ½ teaspoon of Espelette chilli, turmeric or paprika
  • 130 g of wheat flour
  • 130 g of cornflour
  • 1 sachet of baking powder
  • 2 eggs
  • 240 ml of lukewarm milk
  • 95 ml of light crème fraîche
  • 30 g of Parmesan
  • 30 g Gruyère
  • 3 tbsp mild-flavoured olive oil + 1 tbsp for cooking
  • ½ teaspoon of salt and pepper

Tip

This blini recipe is ideal for getting children to eat their vegetables. To make it a bit more fun, serve with some homemade ketchup made with olive oil, which has a subtle flavour. For those who fancy a variation, you can adapt the recipe by replacing the Parmesan with crumbled goat’s cheese.

Instructions

  • Wash the courgette thoroughly, then grate it. Make a marinade with 2 tablespoons of olive oil and your chosen spice (Espelette chilli, paprika or turmeric) and mix it into the courgettes. Leave to stand for 10 minutes.
  • Meanwhile, mix the flours with the yeast, then add the milk, cream, beaten eggs, cheeses, 1 tablespoon of olive oil and the salt. Mix everything together well before adding the marinated courgette.
  • Cover with cling film and leave to rest for 1 hour 30 minutes.
  • Heat a little olive oil in a frying pan (preferably a blini pan) and spoon in a little batter. Cook for 2 minutes on one side, then 1 minute on the other.
