Courgette and mint spread, olive oil from Nice PDO

- 3 courgettes
- 2 squares of fresh cheese
- 1 clove of garlic
- 2 sprigs of mint
- 1 tbsp olive oil from Nice PDO
- Espelette chilli PDO
- Pepper, salt
Tip
The subtly flavoured olive oil from Nice, PDO, will lend this spread its aromas of almond, raw artichoke, broom flowers, hay and pastries (you could also use an PDO olive oil from Nyons or Corsica – Oliu di Corsica – harvested using traditional methods, whose mild flavour will go perfectly with this aperitif).
Instructions
- Peel the courgettes in a criss-cross pattern, then cut them into large chunks. Cook them in salted water with the peeled clove of garlic.
- Once cooked, plunge the courgettes and garlic into cold water, then drain thoroughly to remove as much water as possible.
- Blend the courgettes and garlic with the Carrés Frais. Season with pepper and add a little Espelette chilli PDO.
- Wash and finely chop the mint, then mix it into the mixture. Season with PDO olive oil from Nice and chill until ready to serve.
- Serve on slices of toast (or fresh bread).
