Ingredients

A PDO
For 4 personnes
  • 400 g of pasta (macaroni, for example)
  • 2 courgettes
  • 1 aubergine
  • 1 yellow pepper
  • 1 tomato
  • 1 onion
  • 1 clove of garlic
  • 10 g of olive oil from Aix-en-Provence PDO
  • 40 g of grated Emmental
  • 20 g of Parmesan
  • Basil leaves (optional)
  • Salt, pepper

Tip

Instructions

  • Peel and finely chop the onion.
  • Dice the courgettes. Cut the yellow pepper into thin strips. Dice the tomato and aubergine.
  • Heat some PDO olive oil from Aix-en-Provence in a large saucepan, brown the onion in it, then add the courgettes, the pepper, aubergine, tomato and the crushed clove of garlic. Leave to cook for 15 to 20 minutes, stirring regularly.
  • Meanwhile, preheat the oven to 180°C.
  • Cook the pasta in a saucepan of boiling salted water according to the instructions on the packet. Once cooked, drain the pasta and transfer it to a large mixing bowl.
  • Add the cooked vegetables, then season with salt and pepper to taste.
  • Place everything in an ovenproof dish, sprinkle with Parmesan and Emmental, then bake in the oven for 10 to 15 minutes until the top is golden and crispy. Garnish with a few basil leaves and serve straight away.
