Ingredients

For 4 personnes
  • 1 plain yoghurt
  • 1 egg
  • 100 g of flour
  • 1 c. à café baking powder
  • 1 c. à soupe Nyons olive oil PDO
  • Salt and pepper
  • 3 carrots
  • 150 g raw spinach shoots
  • 1 cooked beetroot

Choose PDO olive oil from Nyons (subtle flavour) for its notes of dried fruit and buttery flavour, possibly accompanied by hints of fresh hazelnuts and/or freshly cut grass.Also choose: PDO olive oil from Nice, PDO olive oil from Languedoc and French olive oils made from the Cailletier, Grossane, Lucques, Tanche...

Instructions

  • Peel and wash the carrots, then cut them into chunks. Steam them and mash them into a purée.
  • Wash and then chop the spinach shoots. Mash the beetroot into a purée.
  • In a mixing bowl, mix together the egg, yoghurt, flour, baking powder and Nyons olive oil (PDO) to form a smooth batter. Divide the batter into 3 bowls: mix one portion with the carrot purée, another with the beetroot purée, and the chopped spinach shoots with the remaining portion.

  • Heat a frying pan with a little Nyons olive oil (PDO). When it is hot, pour in 1 generous tablespoon of batter to make a pancake. Flip it over when small bubbles start to form (about 2 minutes on each side). Repeat until all the batter has been used up.
