Carrot purée with olive oil and orange

- 1 kg of carrots
- 1 litre of chicken stock
- 5 tablespoons of mild-flavoured olive oil
- 1 shallot
- 2 oranges
- Espelette chilli PDO
- Salt, pepper
Tip
For this orange-flavoured carrot purée, we recommend a mild-flavoured olive oil from Nice PDO, from Nyons PDO, from the Languedoc AOC, of the Amellau variety, Argoudeil, Cailletier, Clermontaise, Courbeil, Grossane, Lucques, Menudel, Négrette, Redouneil, Rougette de Pignan, Tanche, Verdale des Bouches-du-Rhône, Verdale de l’Hérault…. Instructions
- Peel the carrots, wash them and cut them into pieces. The smaller the pieces, the quicker the carrots will cook. Finely chop the shallot.
- In a saucepan, add 1 tablespoon of mild-flavoured olive oil, then add the shallot and sweat it gently for 3 minutes, without letting it brown.
- Add the carrot pieces, a generous pinch of salt and enough chicken stock to cover them. Leave to cook for 30 minutes.
- Drain the carrots, keeping the stock.
- Squeeze the juice from the oranges.
- Place the carrots, the remaining olive oil, the orange juice, salt, pepper and Espelette pepper in a tall container. Blend everything until smooth. If necessary, add a little of the cooking stock to smooth out the purée.
