Carrot flan with Nyons olive oil PDO

- 4 carrots
- 1 tbsp Nyons olive oil PDO
- 1 onion
- 2 yoghurts
- 2 eggs
- 1 teaspoon of cornflour
- 1 teaspoon of cumin
- 60 g of grated cheese
- Salt, pepper
Tip
We recommend using Nyons PDO olive oil, which has a subtle flavour, for its smoothness, its creaminess and its notes of dried fruit, as well as its buttery flavour, which may be accompanied by hints of fresh hazelnuts and/or freshly cut grass. You can also use one of these PDO olive oils: Nice and Corsica – Oliu di Corsica – traditional harvest.
Instructions
- Peel and chop the onion into small pieces. Fry it in a casserole dish with the olive oil.
- Rinse, peel and slice the carrots into rounds. Add the carrots to the casserole dish, season with salt and pepper, fry for 5 minutes, then add a glass of water (adjust as required). Cover the casserole dish and cook for 20 to 25 minutes (the carrots should be tender).
- Preheat the oven to 180°C.
- Drain the carrots and mash them. Mix the mashed carrots with the yoghurt, beaten eggs, cornflour, grated cheese and cumin, then season to taste.
- Pour the mixture into individual moulds.
- Bake the flans for 20 to 25 minutes.
