Ingredients

For the sponge cake:
  • 5 eggs
  • 430g of sugar
  • 350g of milk
  • 150g mild-flavoured olive oil
  • 430g of flour
  • 1 teaspoon of baking powder
  • 6 food colourings in different colours
For the filling:
  • 50 cl of full-fat liquid crème fraîche
  • 100g icing sugar
  • A vanilla pod
  • 1 tablespoon of mild-flavoured olive oil
  • 500g mascarpone
  • Sweets or other treats for decoration

Instructions

Prepare the sponge cake:
  • Pour the whole eggs into the bowl of a food processor. Add the sugar and beat until pale. The mixture should double in volume. Add the milk whilst whisking at medium speed, then the olive oil. Gradually add the flour mixed with the baking powder.
  • Once your dough is ready, weigh it so that you can divide it into 6 equal portions and place them in 6 mixing bowls. Add two or three drops of food colouring of your choice to each bowl. Mix well and, if necessary, add another 1 or 2 drops of colouring depending on the desired result.
  • Preheat the oven to 180°C. Divide the coloured batter between buttered and floured cake tins. If you only have one tin, bake in batches. Spread the batter evenly in the tin(s). Bake each cake for 10 minutes. Turn them out of the tins and leave to cool.
Prepare the masking cream:
  • Pour the full-fat liquid crème fraîche into the food processor bowl (make sure it’s well chilled), then whip it into chantilly cream, adding the icing sugar towards the end. Add the vanilla seeds scraped from the split pod, the olive oil and then the mascarpone.
Editing:
  • Place a piece of card the same size as your cakes at the bottom of the dish, then place the first sponge on top. Cover with a centimetre of cream. Continue in this way, alternating the coloured cakes. Cover the sides and top of the cake with the remaining cream. Keep chilled until ready to serve. Decorate with sweets or let your imagination run wild!
