French toast with peaches and olive oil

- To make this recipe for French toast with peaches and olive oil, you will need:
- 3 yellow or white peaches
- 4 tablespoons of mild-flavoured olive oil
- 5 cl of maple syrup
- 3 eggs
- 30 cl of milk
- 20g brown sugar
- 1 slightly stale brioche
Tip
French toast with mirabelle plums and olive oil can also be made with chocolate or mirabelle plums... Olive oil goes very well with peaches. You can try out lots of recipes, such as peaches en papillote with verbena – a real sweet treat...
Instructions
- Peel the peaches, cut them in half, then slice them into medium-sized pieces.
- Briefly fry the fruit in a non-stick frying pan with 2 tablespoons of olive oil and the maple syrup. Set aside
- In a deep plate, whisk together the whole eggs, milk, a tablespoon of olive oil and 20 g of brown sugar.
- Cut 6 slices of brioche, each 4 cm thick, removing the crusts, then soak them in the mixture of egg, milk, olive oil and sugar until they are thoroughly soaked.
- Place the slices of brioche in a second frying pan with 1 tablespoon of olive oil and brown them on all sides.
- Arrange a few slices of peach on top of each brioche. Serve immediately.
