Crêpes made with olive oil

- Ingredients for about twenty crêpes:
- 250 g of flour
- 3 eggs
- 45 cl of milk (or 15 cl of beer and 30 cl of milk)
- 2 tablespoons of mild-flavoured olive oil
- 1 orange or 1 lemon (zest and juice)
Tip
You can replace some of the milk in your olive oil crêpes with beer (about one-third beer and two-thirds milk)! Why not give the olive oil pancakes a go!
Instructions
- To make these olive oil crêpes, you will need:
- Put the flour in a mixing bowl, make a well in the centre and crack the eggs into it, beating them in as you go to avoid lumps.
- Gently pour in the milk (and beer, if using) whilst whisking, then add the citrus juice.
- Add the olive oil, followed by the citrus zest.
- Cook the crêpes and enjoy them with some sugar!
