For 4 personnes
  • 4 slices of country bread
  • 70 g dark chocolate
  • 4 teaspoons of Nyons olive oil PDO

Tip

For these open sandwiches from my childhood, we recommend using a subtly flavoured olive oil from Nyons PDO for its notes of dried fruit, butter, hazelnut, green apple and freshly cut grass. You could also use an olive oil from Nice (PDO) or a Languedoc AOC olive oil. When we say ‘open sandwich’, we’re also thinking of spreads! Here’s our recipe for an olive oil and chocolate spread!

Instructions

  • We have two versions of these open sandwiches from my childhood for you to try:

Version 1 – for those in a hurry:
  • Grate the chocolate.
  • Spread 1 teaspoon of Nyons olive oil (PDO) onto each slice of bread, then place the chocolate on top.
  • It’s ready – enjoy!
<strong>Version</strong> <sup><strong>2</strong></sup> <strong>– for those who have a bit of time to spare:</strong>
  • Pour the Nyons olive oil (PDO) into a ramekin and place it in the fridge for a few hours.
  • Spread this ‘olive butter’ on the bread, then sprinkle the grated chocolate on top.
  • Tip: You can add a few strips of orange or lemon zest to the oil before it sets in the fridge!
