Chocolate mousse, traditional-style olive oil

- To make this recipe for chocolate mousse with olive oil, you will need:
- 120g of chocolate
- 5cl of traditional-style olive oil
- 3 eggs
- 30g of sugar
- Chopped pistachios and olive oil, to serve
Tip

Instructions
Chop the chocolate and melt it in a bain-marie. Stir in the traditional-style olive oil.
- Separate the egg whites from the yolks. Whisk the egg whites until stiff, adding the sugar in three stages once they start to become frothy. Just before you finish, add the egg yolks, beaten with a fork.
- Pour a quarter of the egg mixture over the chocolate, whisk vigorously by hand, then fold in the rest very gently in several batches.
- Pour into small ramekins and chill in the fridge for at least 2 hours. Just before serving, sprinkle with chopped pistachios and a few drops of traditional-style olive oil.
