Old-fashioned olive oil Brookies
Ingredients
- 100g of chocolate chips (dark, milk or white)
- 100g softened butter, ½ salt
- 200g brown sugar or cassonade
- 1 teaspoon of vanilla extract
- 1 egg
- 200g of flour
- ½ teaspoon of salt
- 1 teaspoon of baking powder
- 100g of dark baking chocolate
- 80g of traditional-style olive oil
- 100g of sugar
- 100g of flour
- 2 eggs
- 30g of goji berries

Instructions
Prepare the biscuit dough: cream the butter with the sugar and vanilla until light and fluffy, then add the whole egg. Fold in the flour mixed with the salt and baking powder, followed by the chocolate chips. Set aside in a cool place.
- Preheat the oven to 150°C.
Prepare the brownie batter: melt the dark chocolate. Remove from the heat and add the traditional-style olive oil, sugar, whole eggs, flour and then the goji berries, mixing well after adding each ingredient.
- Grease a square baking tin and pour the brownie mixture into it. Bake for 15 minutes, then remove from the oven. Crumble the cookie dough over the top so that it covers the brownie.
- Return to the oven for 15 to 20 minutes (until the cookie dough is golden brown). This will give you a ‘brookie’! Leave to cool before eating.
Tip
For this recipe, we recommend a PDO huile d'olive de Provence - olives maturées (traditional taste) – for its aromas of black olives, candied fruit, woodland and/or toast.
If you don’t have any, then opt for the PDO huile d'olive d'Aix-en-Provence – olives maturées, the PDO huile d'olive de la Vallée des Baux-de-Provence – olives maturées, or the PDO huile d'olive de Corse – Oliu di Corsica – récolte à l'ancienne.
