Ingredients

A PDO
For 6 personnes
  • 6 slices of country bread (stale)
  • 1 whole egg
  • 20 cl of milk
  • 3 tablespoons of Languedoc AOC olive oil
  • 1 sachet of vanilla sugar
  • 1 teaspoon of vanilla
  • A pinch of salt
  • 2 peaches
  • 4 apricots

Tip

For this French toast, we recommend an AOC Languedoc olive oil for its tomato, almond and apple flavours. Got some brioche left over? Why not try our recipe for French toast with peaches and olive oil!

Instructions

  • Wash the peaches and apricots. Cut them into small cubes.
  • Place the finely diced vegetables in a bowl, mix them with 1 tablespoon of Languedoc AOC olive oil, the vanilla sugar and the vanilla. Set aside in the fridge whilst you prepare the French toast.
  • Vigorously whisk together the egg, milk, salt and 1 tablespoon of Languedoc AOC olive oil.

  • Heat the oiled frying pan, place 2 slices of bread in it that have been soaked in the egg and milk mixture (the bread must be thoroughly soaked), and cook for 2 to 3 minutes on each side.
  • Place the cooked slices on a plate, and cook the remaining slices.
  • Spread the fruit mixture onto each slice of toast. Enjoy straight away!
