My own version of doughnuts, Nyons olive oil PDO
Ingredients

- 200 g of flour
- 100g brown sugar
- 1.5 teaspoons of baking powder
- 10 cl of almond milk
- 1 egg
- 10 ml of Nyons olive oil PDO
- Zest of 1 orange and 1 lemon, or 1 teaspoon of vanilla flavouring
Icings:
- 100g icing sugar
- 1 teaspoon of Nyons olive oil PDO
- 5 ml of orange juice
- 100 g of chocolate (dark, milk or white)
- 1 tablespoon of olive oil
Tip
Decorate your doughnuts to your heart’s content! Choose PDO Nyons olive oil (subtle flavour) for its dominant aromas of fresh hazelnut and cut grass, with slightly buttery notes.Or choose another olive oil with a subtle flavour: PDO olive oil from Nice, AOC Languedoc olive oil, or a French olive oil made from the Cailletier or Grossane varieties…
Instructions
- Preheat the oven to 190°C (Th. 6) on the fan setting.
- In a bowl, mix together the flour, baking powder and brown sugar.
- In a separate bowl, mix together the plant-based milk, the egg, the Nyons olive oil (PDO) and the orange and lemon zest (or vanilla).
- Pour the liquids onto the flour, sugar and baking powder mixture, then whisk quickly (not for too long, so that the batter doesn’t become sticky).
- Spoon the batter into the donut tins, which have been greased beforehand.
- Bake for 20 minutes. Leave to cool.
- Prepare the sugar icing by mixing the icing sugar, Nyons olive oil (PDO) and orange juice.
- Prepare the chocolate icing by melting the chocolate over a low heat, then adding the olive oil.
- Glaze the doughnuts. Sprinkle with sugar decorations (sprinkles, etc.).
