Chocolate and olive oil 'beggar’s tree' with dried fruit

Have you heard of ‘mendiants’? A chocolate mendiant is a sweet consisting of a chocolate disc topped with dried fruit or strips of candied citrus peel. Here we offer these mendiants in the shape of pretty Christmas trees, flavoured with Nyons olive oil PDO.

- 400 g dark chocolate (70% min.)
- 2,5 c. à soupe Nyons olive oil PDO
- 1 c. à café fleur de sel
- 50 g whole almonds
- 50 g whole hazelnuts
- 50 g pecan nuts
- 50 g dried apricots, chopped into pieces
- 50 g dried cranberries
- 50 g unsalted pistachios
- 6 bâtonnets candied orange peel
- 1 branche fresh rosemary (for garnish, optional)
Astuce
Choose Nyons olive oil PDO (subtle flavour) for its aromas of dried fruit and its buttery flavour, sometimes accompanied by notes of fresh hazelnuts and/or freshly cut grass. Don’t have any? You could also choose: PDO olive oil from Nice, PDO olive oil from the Languedoc, and French olive oils made from the Cailletier, Grossane, Tanche and Rougette de l’Ardèche…
Instructions
Melt the chocolate in a bain-marie.
Stir the Nyons olive oil (PDO) and fleur de sel into the melted chocolate. Mix until the mixture is smooth and glossy. Leave to rest for 5 minutes.
- Chop the candied orange sticks.
- Spread the chocolate onto a sheet of baking paper in circles of different sizes. Set aside a little of the ganache. Sprinkle with the dried fruit and pieces of candied orange.
- Leave to set in the fridge for 1 hour.
- Melt the remaining ganache.
- Assemble the Christmas trees, spreading a little melted chocolate between each ring to hold the structure together.
- Decorate with rosemary sprigs to resemble fir branches.
- You can sprinkle a little icing sugar on some of the Christmas trees (to look like snow).
For an even more festive touch, sprinkle with edible gold glitter or a little cocoa powder before serving.
