Ingredients

For 8 personnes
  • 2 pure butter puff pastry
  • 2 eggs + 1 egg yolk for glazing
  • 60 g honey
  • 35 g olive oil
  • 60 g sugar
  • 2,5 c. à café gingerbread spices
  • 150 g of ground almonds
  • 30 g diced candied orange
  • 1,5 c. à café Cointreau ((optional))
  • 1 broad bean

Astuce

Made from ripe olives, subtle-flavoured olive oils are extracted from fresh olives. They are generally mild (with low levels of pungency and bitterness) and have aromas of fruit (dried, ripe) and flowers. They are particularly well suited to vegetables (green salad, carrots, courgettes, etc.), starchy foods (pasta, rice, lentils, etc.), delicate fish (monkfish, cod, trout, etc.), white meats and desserts (pastries, fruit salads, etc.).

Instructions

  • In a bowl, mix together the whole eggs, sugar, honey and French olive oil (subtle flavour) until the mixture is smooth.

  • Add the ground almonds, the spices, the candied orange peel and the Cointreau (optional).
  • Roll out the puff pastry onto a baking tray suitable for the oven. Prick it with a fork.

  • Spread the filling out, leaving a 2 cm border around the edges, then place the charm inside.

  • Place the second piece of pastry on top and seal the edges with a little water.
  • Brush with egg wash (egg yolk + a little water or milk).

  • Leave to rest in the fridge for 30 minutes (optional, but this helps the pastry to flake better).

  • Bake for about 25 minutes at 180°C in a fan oven.
