Fruit salad with a subtle olive oil dressing
Ingredients

- 350 g strawberries
- 2 apples
- 3 kiwis
- 1 candied orange
- 2 vanilla pods
- 10 cl of mild-flavoured olive oil (e.g. PDO from Nice, PDO from Nyons, PDO from Corsica, Lucques variety, Négrette, Grossane, etc.)
- 2 tablespoons of icing sugar
Tip

Instructions
- Pour the oil into a small saucepan.
- Split the vanilla pods in half and scrape out the seeds with the tip of a knife.
- Add them, along with the pods, to the saucepan.
- Place over a low heat and heat for 2 minutes, stirring continuously.
- Remove from the heat and leave to cool.
- Wash, dry and hull the strawberries. Cut them in half.
- Peel and cut the kiwis into small triangles.
- Wash and dry the apples. Cut them into quarters, remove the cores and seeds. Slice them into very thin strips.
- Cut the candied orange into very small cubes.
- Mix all the fruit together in a bowl and drizzle with vanilla-flavoured olive oil.
- Sprinkle with icing sugar, mix gently and chill for an hour.
- Serve.
