Apple crêpe to satisfy your hunger

Ingredients

- 2 apples
- 2 eggs
- 25 cl milk
- 35 g subtle-flavoured olive oil
- 100 g of flour
- 45 g sugar
- 1 sachet of vanilla sugar
- 1 a pinch of baking powder
- 1 a pinch of salt
- 1 c. a tablespoon of rum (optional)
Tip
For these apple-filled crêpes, we recommend using a mild-flavoured olive oil for its smoothness and its aromas of (dried, ripe) fruit and flowers, accompanied by vegetal notes.
Instructions
Separate the egg yolks from the whites. Whisk the yolks with the sugars until the mixture turns pale. Flavour with rum and add the flour and baking powder. Pour in the mild-flavoured olive oil, then the milk, a little at a time, until you have a smooth batter.
- Whisk the egg whites with a pinch of salt until stiff, then gently fold them in.
- Cover and chill for 1 hour.
- Peel and core the apples, then cut them into very thin slices.
- Pour a ladleful of batter into an oiled frying pan, immediately top with apple slices and cook for 2 minutes. Turn over and cook for a further 2 minutes. Repeat until all the batter has been used up.
