Walnut and pecan tart

- For this walnut and pecan tart recipe, you will need:
For the pastry:
- 250g white flour (T65)
- 1 teaspoon of fine salt
- 6 cl of mild-flavoured olive oil
- 12 cl of cold water
For the filling:
- 3 eggs
- 100g of sugar
- 75g brown sugar
- 1 tablespoon of honey
- 15g of mild-flavoured olive oil
- 1 tablespoon of cornflour
- 1 tablespoon of vanilla extract or 2 sachets of vanilla sugar
- 200g mixed pecans and walnuts
Tip
You can replace the honey with maple syrup in the filling for this walnut and pecan tart! Do give our walnut brownie recipe a go...
Instructions
- Mix the flour and salt. Add the mild-flavoured olive oil and the water. Knead the dough quickly to form a ball. Roll it out on a floured work surface, place it in the tin and prick it all over. Set aside in the fridge.
- For the filling: whisk the eggs with the brown sugar and caster sugar. Add the honey and mild-flavoured olive oil, along with the vanilla and cornflour.
- Preheat the oven to 175°C (or 160°C on a fan oven setting). Arrange the walnuts in the rolled-out tart base. Cover with the filling and bake for 35 to 45 minutes.
- Leave to cool for at least 2 hours before serving.
