Christstollen made with Nyons olive oil PDO
Ingredients

- 6cl of milk
- 5g of dry baker’s yeast
- 250g of flour
- 2 eggs
- 25g brown sugar
- 8 cl of Nyons olive oil PDO
- 80g of sultanas
- 50g of candied lemon
- 50g candied oranges
- 50g flaked almonds
- 1 teaspoon of salt
- 1 teaspoon of mixed spice
- 1 tablespoon of rum
Tip
For an extra treat, glaze the Christollen by mixing 100g of icing sugar, the juice of half a lemon and 1 tablespoon of olive oil.
Instructions
- Warm the milk slightly, then mix it with the yeast. Leave it to rest in a warm place for about 15 minutes.
- Mix together the flour, the yeast and milk mixture, the sugar, the olive oil, the whole eggs, the salt and the rum, mixing well after each addition.
- Next, dice the candied lemon and orange. Add them to the dough along with the raisins and flaked almonds. Knead for a good ten minutes until the dough is elastic, then shape it into a ball and leave it to rise for at least 1 hour in a warm place.
- Knead a little more and shape into a loaf. Place on a baking tray and leave to rise for at least 1 hour.
- Bake for 35 minutes in an oven preheated to 180°C. Dust with icing sugar before serving cold.
