Matcha and lemon biscuit

- To make this recipe for matcha and lemon biscuits, you will need:
- 3 tablespoons of Nyons olive oil PDO
- 5 cl of crème fraîche
- 5 cl of milk
- 230g of flour
- 100g of sugar
- 1 lemon
- 2 tablespoons of matcha tea
- 1 pinch of salt
- For the icing: 100g icing sugar, ½ egg white, 1 teaspoon vanilla essence

Instructions
- Preheat the oven to 160°C (Th. 5/6).
- In a mixing bowl, mix together the flour, sugar, tea and salt.
- Add the milk, olive oil and cream. Mix until the mixture forms a thick ball of dough.
- Roll out the dough to a thickness of 3 to 5 mm. Cut out shapes as you wish (or in the shape of a star if you want to make a Christmas tree out of these biscuits; in that case, use cookie cutters of different sizes).
- Bake for 10 to 12 minutes at 160°C. The biscuits will harden as soon as they come out of the oven.
- Mix together the icing sugar, ½ egg white and vanilla essence. The icing should be slightly sticky (add more icing sugar if the mixture is too runny). Ice each cooled biscuit and leave to set for a few minutes.
Variant:
You can also make a Christmas tree using this recipe; if so, follow our assembly instructions:
- Place a little icing in the centre of the largest star.
- Place a star of the same size, but slightly offset.
- Add a little more icing and so on until the Christmas tree starts to take shape.
- Arrange three stars of the same size (staggered in relation to their points) to make a pretty Christmas tree.
- Once the Christmas tree is finished, use a small spoon to place some icing on the tips of the branches.
