Apple, caramel and Nyons olive oil cake PDO

For the cake:
- 120 g caster sugar
- 1 packet of vanilla sugar
- 1⁄2 packet of baking powder
- 125 g flour
- ½ glass of Nyons olive oil PDO
- 3 apples
- 3 eggs
- 1 lemon, juiced
For the apple caramel:
- 1 litre of apple juice (100% pure fruit juice)
- 1 tbsp sugar
- 1.5 tablespoons of Nyons olive oil PDO
Tip
Half caramel, half apple – a real treat!
Instructions
For the caramel:
- Pour the apple juice into a saucepan over a low heat and let it reduce.
When the juice has reduced well (after about 45 minutes), add the sugar and Nyons olive oil PDO, and leave on the heat for 5 to 10 minutes (the mixture should be thick). Set aside.
For the cake:
- Preheat the oven to 180°C (thermostat 6).
- Mix all the ingredients for the dough together.
- Peel the apples, cut them into cubes and mix them with the lemon juice.
Add the apples to the batter. Gently fold in with a spatula.
- Pour the cake batter into a greased tin and bake for 40 to 50 minutes.
- Once the cake has baked, turn it out of the tin, leave it to cool slightly, then decorate it with the caramel (you can warm it up a little so that it becomes runny again ;)).
