  • 200 g fresh cherries
  • 2 eggs
  • 1 tablespoon of honey
  • 150 g fromage blanc
  • 2 tbsp Nyons olive oil PDO
  • 70 g of flour
  • 50 g of ground almonds
  • ½ sachet of baking powder
  • 1 pinch of salt
  • 80 g white baking chocolate

Tip

With cherry season in full swing, this cake – combining the indulgent flavours of chocolate, fresh cherries and subtly flavoured olive oil – will be the perfect way to round off your meal. Nyons olive oil PDO, with its rather mild profile, will contribute its aromas of dried fruit (walnuts, hazelnuts) and its buttery flavour. In desserts, olive oils with a subtle flavour (Nice olive oil PDO, Nyons olive oil PDO), which are mild and characterised by dried fruit aromas, are a safe bet.

Instructions

  • To make this cake, start by preheating the oven to 180°C.
  • Wash the cherries, remove the stalks and stones.
  • Whisk together the eggs, honey, olive oil and fromage blanc. Add the dry ingredients: the flour, baking powder, ground almonds and a pinch of salt, then mix well.
  • Stir in the white chocolate, grated into large shavings, followed by the pitted cherries.
  • Pour the mixture into a well-greased tin and bake for 30 to 35 minutes, keeping an eye on it towards the end of the baking time.
  • Variation: in summer, you could try this recipe with white peaches or raspberries; in autumn, with pears.
