White beans with tomato and pork belly

Ingredients

For 6 personnes
  • 6 slices of pork belly
  • 300 g of dried white beans (such as ‘Mogettes de Vendée IGP’)
  • 800 g of diced tomato flesh
  • 2 teaspoons of tomato purée
  • 2 onions
  • 1 clove of garlic
  • 1 bunch of flat-leaf parsley
  • 3 bay leaves
  • 2 tablespoons of olive oil from Nîmes PDO
  • Salt and pepper

Tip

If you’re short on time, use ready-cooked white beans (just skip step 1) and add the bay leaf and crushed garlic clove in step 2. You can crisp the bacon slices in the oven.

Instructions

  • The day before, soak the white beans.
  • The next day, drain the beans and then place them in a large saucepan of boiling water with the bay leaves, the peeled clove of garlic and a whole, peeled onion. Cook for 1 hour.
  • Halfway through cooking the beans, start preparing the sauce: finely chop the remaining onion. Fry it in a large frying pan with PDO olive oil from Nîmes, then add the tomato purée and cook for 5 minutes. Add the diced tomatoes, season and continue cooking for 20 minutes.
  • Heat a frying pan and dry-fry the slices of pork belly for 5 minutes on each side.
  • Remove from the heat and add the drained beans to the tomato sauce. Season with salt and pepper to taste. Spoon a ladleful of beans in tomato sauce onto each plate and top with a slice of grilled pork belly. Sprinkle with chopped parsley and drizzle with a little Nîmes olive oil PDO. Serve immediately.
