  • 1 kg ripe tomatoes
  • 1 red chilli
  • 2 onions
  • 1 gousse garlic
  • ½ c. à café ground coriander
  • 1 c. à café paprika
  • 2 c. à soupe Nîmes olive oil PDO

Tip

For this spicy tomato sauce, choose an PDO olive oil from Nîmes (intense flavour) for its herbaceous notes, with hints of hay, yellow plum and raw artichoke, possibly complemented by red plum and apple. Or another intense-flavoured olive oil: PDO olive oil from Aix-en-Provence, PDO olive oil from Haute-Provence, or a French olive oil from varieties such as Picholine, Rougette de l’Ardèche, Aglandau or Salonenque...

Instructions

  • Peel and finely chop the onions.
  • Peel, remove the germ and crush the garlic.
  • Wash and chop the tomatoes, then put the pieces through a food mill (using a fine sieve to remove the skin and seeds).
  • Wash and chop the chilli.
  • In a frying pan, fry the onion in Nîmes olive oil PDO, then add the chopped chilli and garlic and the spices. Fry for 2 minutes, then add the tomato purée and cook for 20 to 30 minutes.

  • Keep in a sealed jar in the fridge for 8 days.
  • It goes perfectly with pasta, rice…
