For 4 personnes
  • 100g of bulgur wheat or semolina
  • A small bunch of fresh mint
  • A bunch of flat-leaf parsley
  • 2 tomatoes
  • 1 spring onion
  • 2 yellow lemons
  • Intense-flavoured olive oil
  • Fleur de sel

Tip

We recommend a full-flavoured olive oil that will pair perfectly with your tomatoes and fresh herbs. Choose, for example, an Aglandau olive oil, Picholine, Olivière, … Or opt for an oil with a Protected Designation of Origin (PDO Aix-en-Provence, PDO Haute-Provence, PDO Nîmes, PDO Vallée des Baux de Provence, PDO Provence). Lebanese tabbouleh is rich in fresh herbs; it’s almost a salad of parsley, mint and tomatoes, sprinkled with a few grains of bulgur wheat. Instructions

  • Prepare the semolina or bulgur wheat according to the instructions on the packet. Leave to cool.
  • Meanwhile, wash, dry and chop the fresh herbs. Wash and dice the tomatoes into small cubes. Finely chop the spring onion.
  • Combine all the ingredients in a salad bowl. Squeeze the juice from the two lemons. Drizzle the ingredients with lemon juice and full-flavoured olive oil. Season with salt. Mix well so that the tabbouleh absorbs all the flavours. Leave to rest in the fridge for at least 30 minutes. Serve this Lebanese tabbouleh well chilled.
