Salmon and courgette puff pastries

These puff pastries filled with courgette and fresh salmon will be perfect for your canapés or starters! Easy to make, they’re served with a pesto-style sauce made with olive oil from Nice PDO. Enjoy your meal!

- 1 rectangular puff pastry
- 6 eggs
- 300 g salmon
- 2 courgettes
- 1 spring onion
- 1,5 c. à soupe Nice olive oil PDO
- Salt, pepper
Sauce:
- 100 g blanched almonds
- 150 g cherry tomatoes
- 3 gousses garlic
- 8 g basil
- 1,5 c. à soupe Nice olive oil PDO
- 80 g Parmesan
- Salt, pepper
Astuce
We recommend using a subtly flavoured olive oil from Nice, PDO, for its mildness and its aromas of almond, raw artichoke, broom flowers, hay, grass, leaves, pastries, ripe apples, dried fruit and its citrus notes. You may also use one of these olive oils: Nyons PDO or Languedoc PDO.
Instructions
- Preheat the oven to 180°C.
- Place the dough into a muffin tin, then use another tin (or the base of a glass) to press down on the dough to create indentations.
- Wash and finely chop the onion. Wash and grate the courgettes (using a coarse grater).
- In a mixing bowl, whisk the eggs, add the grated courgettes and spring onion, season with salt and pepper, and spoon the mixture into the compartments of the puff pastry. Cut the salmon into cubes and arrange them in the compartments.
- Cut the pastry into squares around the moulds and fold the pastry over the moulds to form baskets. Bake for 15 to 20 minutes.
Whilst the pastry is baking, prepare the sauce: wash the tomatoes, then place the almonds, tomatoes, Parmesan and Nice olive oil (PDO), garlic cloves, salt and pepper in a food processor and blend to form a sauce. Serve with the puff pastries straight from the oven.
