Ingredients

A PDO
For 4 personnes
  • 1 roll of square puff pastry
  • 3 to 4 very ripe tomatoes
  • 1 large ball of mozzarella
  • Mustard (classic or old-fashioned)
  • Olive oil with a subtle flavour
  • Salt and freshly ground pepper

Tip

You can also replace the mustard in your thin tart with tapenade or olive paste made from French black olives.

Instructions

  • Cut the puff pastry into four equal pieces.
  • Spread a tablespoon of mustard over each slice.
  • Cut the mozzarella into thin slices and arrange them on each slice. Do the same with the tomatoes.
  • Drizzle with olive oil, season with salt and pepper, then bake the four portions at 180°C for about 15 to 20 minutes.
  • Serve warm with a rocket salad drizzled with olive oil.

Tip
