Ingredients

A PDO
For 4 personnes
  • 1 rib of beef
  • 3 tablespoons of full-flavoured olive oil
  • 30g breadcrumbs
  • 20g of pecorino
  • 2 cloves of garlic
  • 1 large bunch of basil
  • Salt
  • Pepper

Tip

For an olive oil with an intense flavour, choose, for example, the PDO from Nîmes, the Baux-de-Provence Valley, Haute-Provence, Aix-en-Provence, Provence… or an oil from the Aglandau variety, such as Picholine, Olivière, …

Instructions

  • Mix together the breadcrumbs, pecorino, strong-flavoured olive oil, crushed garlic cloves and finely chopped basil. Season with salt and pepper.

  • Using a brush, brush the rib of beef with strong-flavoured olive oil, then season with salt and pepper. Cook on the barbecue for 20 to 30 minutes, turning regularly.

  • In the final stage, spread the herb paste over the top of the rib of beef and cook for a few minutes.

  • Leave the meat to rest in a dish covered with aluminium foil for 10 minutes before carving and serving.
