Pork ribs marinated in Corsican olive oil – Oliu di Corsica, harvested using traditional methods PDO

- 4 pork ribs
- 1 onion, finely chopped
- 1 clove of garlic, crushed
- 3 tablespoons of balsamic vinegar
- 5 tablespoons of honey
- 3 tablespoons of Corsican olive oil – Oliu di Corsica – traditional harvest PDO
- 1 teaspoon of Espelette pepper
- Salt
Tip
This recipe can also be made on the barbecue… it’s absolutely delicious!
Instructions
- Prepare the marinade by mixing all the ingredients (except the pork ribs) together in a bowl.
- Place the pork ribs in an airtight container and pour the marinade over them. Close the container and leave to marinate for 2 hours in the fridge. Then drain the meat and set the marinade aside.
- In a frying pan, sear the meat on both sides, then cook for 5 to 8 minutes, until the ribs are nicely browned.
- Reduce the marinade in a saucepan over a low heat for 5 to 10 minutes.
