Green olive and white bean hummus
Ingredients
- 1 small tin of plain cooked white beans (400g)
- 100g of green olives Picholine (PDO Nîmes)
- The leaves from about ten sprigs of flat-leaf parsley
- 4 tablespoons of olive oil from the Vallée des Baux de Provence PDO
- 1 clove of garlic
- 1/2 teaspoon of Espelette pepper
- Salt, pepper
- Raw vegetable sticks and toast to serve with

Instructions
Stone the Picholine olives, remove the leaves from the parsley, peel the garlic and remove the germ.
Blend all these ingredients together with the drained white beans, olive oil from the Vallée des Baux-de-Provence and the chilli. Taste and season. Add a little olive oil if the texture is too thick.
