Beetroot and roasted chickpea hummus

For a 100% pink aperitif, make some delicious homemade breadsticks and a hummus with beetroot and roasted chickpeas. Serve it all with matured French olive oil!

  • 250 g cooked chickpeas
  • 2/3 a cooked beetroot
  • 3 c. à soupe French olive oil with a mature flavour
  • 1 lemon juice
  • 100 g yoghurt
  • 1 c. à soupe tahini
  • 3 gousses garlic
  • Salt, pepper
  • Sesame seeds
  • 1 à 2 c. à soupe curry
For breadsticks
  • 100 g of flour
  • 30 g French olive oil with a mature flavour
  • Beetroot juice
  • Salt, pepper

French ‘matured’ olive oils are made from olives that have been stored and left to ripen for between 2 and 8 days, under appropriate and carefully controlled conditions, before the oil is extracted. They are mild, with notes of black olives, bread, cocoa, mushrooms and candied fruit...

Instructions

  • Make the breadsticks by mixing together the flour, salt, pepper and matured French olive oil. Adjust the consistency of the dough with beetroot juice. Divide the dough into small balls and roll them into sticks. Place them on a baking tray lined with baking paper and bake for 15 to 20 minutes until the breadsticks are golden brown.

  • Meanwhile, prepare the hummus. Peel the garlic clove and chop it. Cut the beetroot into large cubes.
  • In a mixing bowl, mix together the chickpeas, salt and pepper, curry powder and 1 tablespoon of matured French olive oil. Spread out on a baking tray and roast the chickpeas (5 to 10 minutes at 180°C).

  • In a food processor, add the yoghurt, roasted chickpeas, diced beetroot, chopped garlic, olive oil, sesame seeds and tahini. Blend, then gradually add salt, pepper and matured French olive oil until you achieve the perfect consistency. Adjust the seasoning with salt, pepper and curry powder.
