Ingredients

A PDO
For 8 personnes
  • 200 g of flour
  • 160 g softened butter or 4 tablespoons of Nyons olive oil PDO
  • 100 g of Parmesan
  • 40 g pitted black Nyons olives PDO
  • 4 teaspoons of chopped herbs (parsley, thyme, rosemary, chives, etc.)
  • 2 eggs
  • 2 pinches of Espelette chilli
  • 4 pinches of salt
  • 1/2 teaspoon of baking powder

Tip

Olive oil with a subtle flavour is generally mild, with aromas of fruit (dried, ripe, red) or flowers, accompanied by vegetal notes.Choose one of the following French olive oils with a subtle flavour: Nyons olive oil PDO, Nice olive oil PDO, Languedoc AOC olive oil and olive oils from the Lucques, Cailletier, Tanche and Grossane varieties...

Instructions

  • Preheat the oven to 170°C (gas mark 5/6)

  • Mix together the flour, baking powder, salt, chopped herbs, chilli and Parmesan.

  • Add the softened butter or olive oil and the eggs, then work the dough with your fingers until it is smooth.

  • Add the Nyons black olives (PDO), either chopped or sliced into rounds.

  • Place small balls of dough onto a baking tray lined with baking paper, then flatten them so that they take the shape of a biscuit.

  • Bake for 20 minutes. Remove them from the oven and leave to cool before serving as an appetiser or alongside a mixed leaf salad or lamb’s lettuce salad.
