Ingredients

For 4 personnes
  • 400 g penne-style pasta
  • 4 lovely tomatoes (or 400 g of peeled tomatoes)
  • 2 small chillies
  • 2 cloves of garlic
  • Haute-Provence olive oil PDO
  • 80 g of Pecorino Romano
  • Parsley
  • Salt

Tip

We recommend using a full-flavoured olive oil from Haute-Provence, PDO, for its aromas of raw artichoke, banana, grass, apple and fresh almonds, its bitterness and piquancy, which will give this pasta an inimitable character. You can also use one of these PDO olive oils: Vallée des Baux de Provence, Nîmes, Aix-en-Provence, Corsica – Oliu di Corsica.

Instructions

  • Blanch the tomatoes for 1 minute, then remove the skin (they’ll come off easily). Roughly chop the tomatoes into pieces.

  • Peel the garlic cloves, then crush them roughly with the blade of a knife.
  • In a frying pan, briefly fry the garlic cloves in a dash of olive oil, then add the finely chopped chilli.
  • Add the tomatoes and cook until the sauce has reduced well. Season with salt. Meanwhile, cook the penne in a saucepan of boiling salted water. Drain the pasta al dente and add it straight to the sauce.

  • Add a generous handful of chopped parsley and 1 tablespoon of olive oil, then sauté the penne for a minute.
  • Serve the penne all’arrabbiata in a deep plate and sprinkle with grated pecorino.
