Ingredients

For 4 personnes
  • To make these olive oil pancakes and caramel for around 4 people, you will need:
  • 170 g of milk
  • 180 g of flour
  • 15 ml of mild-flavoured olive oil
  • 20 g of sugar
  • 1 egg + 1 egg white
  • 1/2 sachet of baking powder
  • 1 pinch of salt
For the caramel:
  • 200 g caster sugar + 5 cl water
  • 5 cl of mild-flavoured olive oil
  • 25 g salted butter (or butter and salt)
  • 1/2 scraped vanilla pod (or extract)

Tip

Choose a subtly flavoured olive oil for its aromas of (dried, ripe) fruit and flowers, accompanied by vegetal notes.PDO Nice, Nyons, Languedoc AOC or French olive oils of the Négrette, Grossane, Cailletier, Tanche varieties, etc., will be ideal.For breakfast, why not try crêpes made with olive oil, or banana bread with cinnamon, honey and olive oil to give you a boost of energy first thing in the morning! Instructions

For the pancakes:
  • Mix together the flour, baking powder and salt. Add 1 egg yolk and the olive oil, then gradually add the milk, stirring with a whisk. Whisk the 2 egg whites until stiff and gently fold them in. The batter should be smooth and slightly thick.
  • Leave to rest for 30 to 45 minutes at room temperature (in a cool place if it is too hot).
  • Heat a little olive oil in a frying pan. Spoon the pancake batter into small mounds. Cook. As soon as bubbles appear on the surface, flip the pancake over and cook the other side.
For the caramel:
  • Combine the sugar and water in a saucepan and cook until it turns a lovely colour; remove from the heat, then add the butter in several batches, along with the olive oil and the scraped vanilla pod. Leave to cool. Drizzle the caramel sauce over the pancakes and enjoy!
