Orange jam Swiss roll

- 4 eggs
- 100g of flour
- 80g of sugar
- 1 sachet of vanilla sugar
- 1 tablespoon of olive oil from Provence PDO
- ½ jar of orange jam (not too sweet)
Tip
For this Swiss roll, we recommend using an intense-flavoured olive oil from Provence, PDO, for its aromas of herbs and raw artichoke, which can be complemented by notes of banana, hazelnuts, fresh almonds and tomato leaves. A slight tingle may be present on the finish. You can also use one of these PDO olive oils: Aix-en-Provence, Nîmes, Haute-Provence, Corsica – Oliu di Corsica, Vallée des Baux-de-Provence. Instructions
- Preheat the oven to 180°C.
- Separate the egg whites from the yolks.
- Whisk the egg yolks, sugar and vanilla sugar until the mixture turns pale, then add 1 tablespoon of PDO Provence olive oil and continue whisking. Add the sifted flour and mix until the mixture is smooth.
- Whisk the egg whites until soft peaks form, then gently fold them into the batter using a spatula.
- Pour the batter onto a baking sheet, spreading it out to cover the entire length, and smooth it out with a spatula.
- Bake for 12 to 15 minutes at 180°C until the biscuit is a nice golden colour.
- Turn the sponge cake out onto a tea towel and carefully remove the baking paper.
- Spread orange jam over the sponge, leaving a 2 cm border around the edges. Roll up the sponge lengthways, then roll it up tightly and chill for 1 hour.
- Serve this Swiss roll in slices.
