Marinated prawns, grilled on the plancha

- 400 g peeled prawns
- 3 tbsp mild-flavoured olive oil
- 1 clove of garlic
- 2 teaspoons of ginger
- 1 teaspoon of turmeric
- 1 teaspoon of cardamom
- Juice of 1 lemon + zest
- Pepper
Tip
We recommend serving these marinated prawns with a mild-flavoured olive oil, chosen for its aromas of dried fruit and flowers, complemented by vegetal notes. Choose a Nyons oil PDO (variety Tanche), an oil from Nice PDO (Cailletier variety), or a single-variety oil from Négrette, Lucques, Grossane, etc.
Instructions
- Mix together all the ingredients for the marinade (except the lemon juice): olive oil, lemon zest, turmeric, cardamom, ginger, garlic and pepper.
- Next, pour the marinade over the prawns, which you have already placed in an airtight container. Close the lid and shake the container to coat the prawns in the marinade.
- Leave for half an hour, then pour in the lemon juice.
- Heat up the griddle. Then cook the prawns for a few minutes on each side. You can also pour the remaining marinade over the prawns whilst they’re cooking.
