Fresh prawns with vegetables
Ingredients

- 1 tomato
- 1/2 yellow pepper
- 1/2 courgette
- 1/2 fresh chilli (adjust the amount depending on its heat)
- 1 lime
- 8 lovely basil leaves
- 4 sprigs of fresh coriander
- 12 cooked prawns
- 1 small slice of smoked salmon
- 1 small clove of garlic
- 1/2 teaspoon of curry powder
- 2 handfuls of rocket
- 4 tablespoons of mild-flavoured olive oil
Tip
If you’re taking this dish to work, feel free to prepare it in small individual containers with lids.
Instructions
- Cut the vegetables (tomato, pepper and courgette) into very small cubes.
- Chop the chilli and finely chop half of the basil and coriander leaves.
- Mix the vegetables with a generous tablespoon of olive oil, a little salt, the chopped herbs and the chilli. Set aside in the fridge (in small individual containers that are easy to turn out or carry).
- Peel the prawns.
- Mix together the chopped garlic, lime juice, curry powder, a little salt and a tablespoon of olive oil. Pour over the prawns and leave to marinate in the fridge with the previous mixture for 2 hours.
- To serve, mix the rocket with the remaining chopped herbs, turn out the vegetable mixture onto the bed of rocket, and top with the marinated prawns and slices of smoked salmon. Drizzle with a little olive oil and enjoy.
