  • 2 onions
  • 1.5 litres of chicken stock (water + 3 stock cubes)
  • 1 bouquet garni
  • 1 kg of broccoli
  • 25 cl of cream
  • 2 tbsp Nyons olive oil PDO
  • Salt, pepper
  • Mix of seeds and crackers (optional)

Serve, if desired, with seeded or cheese crackers. Choose a Nyons olive oil PDO (subtle flavour) for its dominant aromas of fresh hazelnut and cut grass, with slightly buttery notes.Or choose another olive oil with a subtle flavour: PDO olive oil from Nice, AOC Languedoc olive oil, or a French olive oil of the Amellau, Cailletier, Grossane, Lucques, Négrette, Tanche, Verdale from the Bouches-du-Rhône…

Instructions

  • Wash the broccoli florets, trim the stalks by 5 cm and remove the leaves. Chop everything into rough pieces.
  • Peel and finely chop the onions. Gently fry them over a low heat in 1 tablespoon of Nyons olive oil (PDO). Add the broccoli florets.
  • Pour in the chicken stock and bring to the boil. Add the bouquet garni and simmer for 30 minutes, until the broccoli is cooked to perfection.
  • Next, remove the bouquet garni before blending the mixture. Add the cream and 1 tablespoon of Nyons olive oil (PDO), season to taste and sprinkle with a few pumpkin seeds, for example.
