Ingredients

A PDO
For 6 personnes
  • 180g of flour
  • 1 sachet of baking powder
  • 3 eggs
  • 10 cl of mild-flavoured olive oil
  • 10 cl of milk
  • 100g of grated Gruyère
  • 100g fresh figs
  • 70g of dried figs
  • 100g of cured ham (thickly sliced)
  • Pepper

Tip

Outside the fig season, use only dried figs, which you should soak in tea for 30 minutes. Drain them afterwards before cutting them into pieces and mixing them into the batter for the fig and cured ham cake.

Instructions

  • Preheat your oven to 180°C.
  • In a mixing bowl, carefully mix the yeast into the flour. In another bowl, whisk together the whole eggs, olive oil and milk. Season with pepper.
  • Gradually stir this mixture into the flour until you have a smooth batter with no lumps.
  • Add the grated Gruyère, the diced figs (fresh and dried) and the diced cured ham.
  • Stir gently.
  • Grease a loaf tin, if necessary, and pour in the mixture. Bake for 50 minutes.
  • Check whether the cake is cooked by inserting a toothpick into it: it should come out clean.
  • Leave to cool before turning out. Serve lukewarm or cold.
