Energy-boosting open sandwich: salmon, avocado and olive oil

- 2 slices of seeded or country-style bread
- ½ avocado
- 100 g of diced smoked salmon
- Pepper
- Olive oil with a subtle flavour
- Lemon juice
Tip
Note: the best time of year to eat avocados is from December to April. You can use a mild-flavoured olive oil from PDO Nice, PDO Nyons or PDO Corsica – Oliu di Corsica – harvested using traditional methods, or from the Tanche, Grossane and Cailletier varieties, etc.
Instructions
- Toast the slices of bread. Set aside.
- Cut the avocado in half (to keep the unused half, drizzle some lemon juice over it, then wrap it in cling film and put it in the fridge). Peel the avocado and slice it lengthways into thin slices. Drizzle a little lemon juice over the avocado slices (this prevents them from turning brown).
- Arrange the slices on the slices of bread, followed by the diced smoked salmon. Season with pepper and drizzle with a little mild-flavoured olive oil.
- It’s ready – all you have to do is tuck in and recharge your batteries!
