Einkorn and mixed vegetables

- 500 g of einkorn wheat
- 1 glass of white wine
- 2 litres of chicken stock
- 1 onion
- 1 shallot
- 2 stalks of celery
- 3 carrots
- 3 tablespoons of olive oil from the Baux-de-Provence Valley PDO
- ½ teaspoon of Espelette chilli
- Salt, pepper
Tip

Instructions
- Soak the einkorn wheat in cold water for 1 hour (or rinse it under cold water – it will take longer to cook if not soaked).
- Prepare the stock. Finely chop the onion, shallot, celery and carrots.
- Sauté the onion and shallot in 2 tablespoons of olive oil from the Vallée des Baux-de-Provence PDO until they become translucent, taking care not to brown them.
- Add the finely chopped celery and carrots, fry for 30 seconds, then add the drained einkorn wheat. Stir well so that the olive oil coats it.
- Add the wine and leave it to soak in. Gradually add 1 ladleful of stock at a time until the einkorn wheat is cooked, allowing the stock to be absorbed between each addition. The einkorn wheat should be cooked but still slightly firm (allow about 20 to 30 minutes).
- Once cooked, add 1 tablespoon of olive oil and the Espelette chilli.
- Stir, leave on the hob for 1 to 2 minutes, then serve.
